The Head of the Bight to watch the whales - fan-bloody-tastic if you're lucky enough to be there at the right time as we were.

The perplexing question you'll have when you hit Norseman will be turn left to Esperance, right to Kalgoorlie or the Hyden/Norseman Rd for a quick trip into Perth. If into WA is your first time I'd turn left and do the coast around to Perth via Esperance and Albany to Perth and the Grt Eastern Hwy back to Kal and then home.

Hyden/Norseman Rd has some interesting sights but is a dry weather road only. Norseman to Perth via this route is the shortest and quickest (and a damned less trucks and more opportunities to free camp).

Go with the flow and if you see a track heading south while crossing the Nullabore take it and have a look. The cliffs are amazing.

Shepparton Victoria?
Are you used to long distance driving? ie 1000km + per day.
Fatigue management will have to be given some priority if the trip is to be enjoyed.

A long way for 2 weeks and only a few days to see anything in the west, Unless you are driving day and night to get there and back it will only be a glimpse of WA.
You will enjoy the 2 rest days in Perth.

Because you have such a short time and the time of year(winter). I would probably suggest Noresman then turn right.
Kalgoorlie, Menzies(lake ballard), Niagra dam, Koonkynie. Gwalia, Leonora, Leinster, Sandstone, Mt Magnet.
Then south as it will be wildflower season - Mt Magnet, Wubin, New Norcia, Perth.

After Perth head back to Kalgoorlie via Brookton, Corrigin, Hyden(wave rock) then if the weather is good head straight on to Norseman on the gravel road. If weathers bad head north 100k's onto the great eastern highway. If time permits on the way home a side excursion to Koonalda( between Border Village and Nullabor roadhouse) is worth a visit.

The two problems with doing the Southwest of W.A is one, it is the middle of winter so it will be wet and misserable(think Melbourne) and two, it is a magic area at the right time of the year. Winter isn't that time, put it off untill you have time to enjoy it.
Only my opinion.

When I was young & bullet-proof, a mate & I did Melbourne-Perth 25 years ago & it took four days driving pretty much all day. Remember you gain time across the state borders heading west but drive directly into the sun after 4pm or thereabouts so leave early each day.
We stayed @ Port Pirie, Nullarbor & Norseman on the way.
While there's plenty to see on the way, if you get the chance please stay at the Nullarbor Roadhouse & in the evening just after dark walk down the highway for 200-300 metres then stop, look around & take in the sheer isolation, tranquility & silence of the place.
We truly do have the best country in the world. Doing this trip is a great experience you'll never forget. After doing this trip, my wife & I moved up near Wangaratta & I wouldn't go back to Melbourne if you paid me!!!
