Puttanesca - Camp Style

Description

Italian sausage, spicy salty flavours in this classic tomato based pasta dish. I'll let you google the origin of the name "Puttanesca"

Ingredients

  • Serves 4
  • 1c chopped Cabanossi/Italian Sausage or Bacon
  • 1 onion - diced
  • 2 cl garlic - chopped
  • 1 tin tomatoes
  • 1T tomato paste
  • 2- 3 anchovies - chopped (these melt away but add depth to the sauce, this dish is not fishy!! Trust me :)
  • 1T chopped drained Capers
  • chilli flake to taste
  • fresh parsley (optional)
  • Cracked Black Pepper
  • Pasta - any type
  • Parmesan to serve

Method

  • Step 11. Stir fry sausage with garlic & onion for 4 minutes
  • Step 22. Add chopped anchovies, fry 1 min
  • Step 33. add tom paste - fry 2 min low heat
  • Step 44. add Chilli, Capers & Tinned Tomatoes and 1/2 tin water, bring to boil and reduce to a simmer - 10min or until slightly thickened
  • Step 55. add al dente pasta to the sauce and stir through parsley & cracked pepper
  • Step 66. top with parmesan and extra parsley and enjoy with a red wine :)
