This is a great recipe given to us by vegetarian friends long ago. We are not vegetarian ourselves, but this recipe is a regular for us. It uses soy mince, which in this recipe we prefer to meat. It is tasty & very easy to make & has the advantage of needing no ingredients requiring refrigeration, useful when spending extended periods in the bush. It also freezes well.
Ingredients
- 1- 2 Onions
- 1 teaspoon Cumin seeds
- Chilli powder - how much you use depends upon your preference for heat.
- 1 can tomatoes
- 1 can Soy mince (often called ‘Casserole mince’ - available in most supermarkets)).
- 1 can Kidney beans
- 2 teaspoons paprika
- 1 teaspoon coriander powder ( or more - I prefer 2 or 3 teaspoons)
- 2 desert spoons sugar
Method
- Step 1Chop & fry the onions with the cumin seeds & chilli.
- Step 2Add the tomatoes, mince & beans
- Step 3Stir in the paprika & coriander
- Step 4Simmer for 10 minutes & then add sugar
- Step 5Serve topped with grated cheese & sour cream (if available - ok without), on a bed of rice, or with bread
