Philip, I have, actually registered as a two seater now. I have a 40lt fridge in the middle, just behind the console and made up some frames to locate commercial fish box with lid on either side, drinks are stowed behind the fridge. I am considering redoing the area and have got a few ideas from FB pages. If I was doing it again, think I would locate fridge on one side and have a false floor level with top of fridge and mesh to stop stuff falling on the fridge. I am also looking at modifying door hinges to allow them to open wider. Still thinking about the change.

I ran
mine as a two seater all the time that I had it. Racking in the centre between 2 cargo barriers.
If you go down that path Philip, it may
well be worth looking at beefing up the rear spring tower supports with a kit to deal with added weight.
Regards
Mick

2 Seater GQ - Bunk over rear fridge and drawers and middle row general storage. Have enough headroom by allowing top of 40 lit Engle to raise above bunk base height. Had to build my own compact fridge slide to save space. Roof rack takes bulky and unsavoury items. Ahh no pics at the moment car full of garden furniture etc

Philip , I removed 2nd & 3rd row seats and put in a removeable flat base which is 1900 X 1200mm and which allows you to sleep in the car. Takes about an hour to convert back to 5 seater.
However its so useful to carry things around town that it only gets switched over 2 or 3 times a year.
By careful choice of camping gear we are able to carry everthing required for long trips inside the car.
We have several iteration's of this and attached is photo showing a small fridge which fits (just) between the front seats.
This photo has the 6 inch foam mattrest removed.
It has a removeable platform across back , same height as the
camp chairs, which carries stove water and picnic case .
Chainsaw is electric so no fumes.
