We would like to fly to
Darwin in the wet season and do a flight over the falls and
kakadu. Would also like to see some tropical storms and experience the humidity! What month is the best time?

Providing we get a "normal" wet season this year anytime from November/December for thunderstorms and from January to April if you want to see waterfalls. Thunderstorms usually prevail in monsoon breaks and of course it rains like mad during monsoon time.
It is however a bit unpredictable. I brought my brother up 2 years ago between Christmas and New Year and it was an absolute fizzer in terms of thunderstorms or heavy rain.

Agree with Neil, Feb for the heat and March for the water falls. Hope we get a normal wet this year.
